Recipe: Fall Feast Festivities

As the weather gets cooler and the summer season slips away, we can look ahead to new opportunities and changes that fall brings! The changing leaves signal a bittersweet back-to-school frenzy, fall fashion, and maybe most importantly, fresh fall ingredients for our resident foodies!

Now before you grab that tired pumpkin spiced latte and standard butternut acorn spaghetti squash autumnal meal {so many squashes}, let’s spice up your repertoire with a  delicious new recipe. Who says summer meals get to have all the fun?

We teamed up with celebrated Chef/Owner, John Cataldi of Solstice Restaurant and Chef de Cuisine, John Ricardo, to create an inspiring recipe with our local seasonal ingredients. Warning: this may induce drool-worthy reactions.

Roasted Butternut Apple Bisque

Solstice Butternut Squash Apple Bisque


  • 1 butternut squash, peeled & diced to medium size
  • 1 white onion, peeled & medium diced
  • 1 leek, washed & medium diced
  • 2 celery stalks, medium diced
  • 2 large carrots, peeled & medium diced
  • 2 cloves of garlic crushed
  • 3 thyme sprigs, chopped
  • 1 sage leaf, chopped
  • 4 cups of chicken stock (may need an additional cup to reach desired thickness)
  • 2 Granny Smith apples, peeled & diced
  • 2 tablespoons of apple cider vinegar
  • fresh grated nutmeg or nutmeg seasoning (optional)
  • toasted pumpkin seeds (optional)
  • Salt + Pepper

Let’s Get Cookin’:

  1. Toss first 8 ingredients in 2 tbs canola oil, add a dash of salt & paper; roast in the oven at 325˚ for 30-45 minutes, until edges are browned and they are “fork tender”.
  2. Transfer roasted vegetables in large sauce pot, cover with chicken stock & add apples; simmer for 15 minutes.
  3. After, puree in blender until smooth.
  4. Return to pot to adjust seasoning & add ACV; simmer for 3 – 5 minutes. *Option to add more chicken stock (a cup or so) to “thin” or reach desired thickness.
  5. Serve warm with grated nutmeg, toasted pumpkin seeds, & fresh sage.
